The Grapefruit Express

Style: Fruit IPA

Strength: 5.7% a.b.v.

Tasting Notes: This is a big bold American IPA, packed full of grapefruit notes. The initial aroma is pithy grapefruit and sweet orange, boosted by some complimentary hops. First tasting is sweet grapefruit, coming from the addition of over 60kg of juice, followed with a nice level of bitterness and a sweet malt profile, all finishing with a clean acidity from the fruit that leaves a lingering zesty flavour on the palate.

Silk Road

Style: Saison

Strength: 5.8% a.b.v.

Tasting Notes: Silk Road has been brewed to be a classic rustic style saison in reminiscence of the old farmhouse ales brewed in Wallonia. Brewed with a very under-modified base malt, malted wheat & hopped exclusively with Saaz, Silk Road gives a very welcoming phenolic nose and clean refreshing flavour.

With aromas of lemon rind, clove, pink pepper corn & freshly cut grass, the beers nose tempts you into its first sip. Upon tasting Silk Road you’ll find it offers flavours of citrus fruit, bubblegum, fresh straw and more of that lemon you smelled in the nose of the beer. This experience is ended with a very clean and dry finish, backed up with a firm bitterness. Silk Road Saison is the perfect pair for your summer days and evenings. Á votre santé.

The Fresh Prince of Kildare

Style: New England Double IPA

Strength: 9.0% a.b.v.

Tasting Notes: The Fresh Prince of Kildare is a bold double IPA brewed in homage to the New England IPA craze that has taken over the craft beer world.

On the nose, this beer offers a deep hop-saturated aroma and upon digging deeper into it, you’ll find ripe mango, orange pith, grapefruit and a bouquet of assorted tropical fruits in the background.

Tasting The Fresh Prince is an experience to savour, up front you’ll find more of that mango, fighting alongside the orange, complimented by other bright citrus notes. This beer boasts a big body, yet the finish has a light but solid bitterness.

Hard Candy

Style: Speciality Ale

Strength: 4.88% a.b.v.

Tasting Notes: Festival season gives us the opportunity to throw up some weird and adventurous brews. This beer is just that! ​Pours a hazy golden colour with an off white head and the moment you smell it, it stirs back those childhood memories of the hard Rhubarb an Custard sweets that your granny always had in a glass jar on the shelf. The taste continues the nostalgia with big hits of rhubarb and enough vanilla and sweetness to present the custard. A refreshing tartness from the rhubarb helps ensure the beer is not sickly sweet and can be enjoyed again and again.

Something Witty

Style: Thai Infused Wit

Strength: 4.0% a.b.v.

Tasting Notes: With spring on the Horizon we got together with the good folk up at Rascals brewing to bring you a Belgian classic with a twist, we knew we would have to think of something witty to call it so that’s exactly what we did. This hazy “White” beer has warming and refreshing hints of Lemongrass, Ginger, Lime and Pear, All of which are additions we made to the collaboration brew. On drinking this lively brew hits big notes of lemongrass, supported by the ginger and black lime while the finish is fresh with hints of Belgian yeast and pear. At 4.0% we can’t see this one hanging around for too long!​

Raspberry Weisse City

Style: Fruit Infused Berliner Weisse

Strength: 3.8% a.b.v.

Tasting Notes: Weisse City  is a  tart, refreshing wheat ale. A kettle sour Berliner Weisse brewed with raspberry purée to recreate the traditional ‘mit syrup’ serving. Bready wheat notes provide a soft background and delicate mouthfeel, while the fruit and acidic flavours contrast to create a very refreshing, but undeniably uniquely flavoured brew.

Style: Hopfenweisse

Strength: 5.1% a.b.v.

Tasting Notes: On pouring this looks exactly like what you would expect in a wheat beer, hazy straw colour with a big white head. First sniff and you know your in for something a little different, all the typical flavours are there, orange pith from the wheat, clove and cinnamon from the yeast but with an added tropical fruit and even slightly savoury green pepper that the Equinox hop brings to the beer. Flavour carries through with Gung-Ho, tropical fruit bursts from the hops, but a lingering finish of spice and orange that you know you’ve just had a top drawer wheat beer.

Quiet Riot

Style: Pale Ale

Strength: 5.1% a.b.v.

Tasting Notes: A light golden coloured pale ale. The aroma is a balance of biscuity malt and Citurs hops. Flavours carry though with bready and biscuit notes from the malt and ripe mango and tangarine notes from the hops. Very drinkable beer again and again, great on cask!

Ripcord 2.0

Style: Red Ale

Strength: 4.1% a.b.v.

Tasting Notes: Ripcord is a modern twist on the classic red ale style. Dry-hopped with US Centennial hops which imparts a piney resinous character alongside the more traditional flavours of caramel and toffee.

Weisse City

Style: Berliner Weisse

Strength: 3.8% a.b.v.

Tasting Notes: The first of our sour beers is a traditional Berliner Weisse. The beer pours a slightly hazy straw colour and is refreshing, tart, sour and acidic, with citric fruit notes and a nicely balanced malt finish.

Style: East Coast IPA

Strength: 5.8% a.b.v.

Tasting Notes: Pouring a hazy golden colour, you know that a big hop bomb has just been poured. An immediate hit of juicy citrus hops on the nose make you want to dive straight in to this beer. A soft bitterness and creamy body match wonderfully with the powerful papaya, guava, mango and melon flavour of the beer. Easy drinking and not overpowering, this beer won’t be around for long.

Style: West Coast IPA

Strength: 5.0% a.b.v.

Tasting Notes: Quite the opposite to its coastal rival Crosswalk, this beer pours almost amber in colour. On the nose is a giant explosion of Pine, grapefruit and ‘Dank’. Not for the faint hearted the big bold hop character carries through with grapefruit, berry and that earthy/dankness and a high bitterness but a solid malt back bone to keep it all in check.

Mandarin Crush

Style: Fruit Infused Lager

Strength: 5.7% a.b.v.

Tasting Notes: This fruit lager has a big hit up front from both mandarina hops and mandarin purée, pours a hazy straw from the fruit additions. The taste is a rich and sweet mandarin punch, with just enough bitterness to keep it in balance. It’s a that beer leaves a lingering, sweet orange flavour that makes you want to come back for more.

Sidewalk Surfer

Style: California Common

Strength: 5.0% a.b.v.

Tasting Notes: The perfect Autumn beer for ale drinkers and lager drinkers alike. This is characteristic of this style of beer, which is achieved by fermenting a lager yeast at ale temperatures; so it’s not as heavy as an ale, but neither is it as light as a lager. Light amber in colour, medium bodied with a malty character, mildly fruity with an assertive hop bitterness all coming from the addition of Cascade and Bobek hops.

Style: Hoppy Red Ale

Strength: 5.8% a.b.v.

Tasting Notes: A big burst of ripe citrus fruits fill the aroma, with a little touch of spice coming from the crystal rye. On tasting, big punches of grapefruit and Blood Orange power through with some more gentle flavours of Apricot, mango and other tropical fruits. A smooth bitterness is all balanced with a sweet caramel/toffee flavour from the rich dark malts and again that little kick of spice leaving a lasting finish.

Amber Avenger

Style: Irish Amber Ale

Strength: 5.5% a.b.v.

Tasting Notes: Rich biscuity finishing malts, balanced with just enough bitterness make Amber Avenger a traditional Irish amber ale that is deep tawny yellow to the eye, but not heavy on the palate. Rich biscuit malt flavour up front with sweet caramel and some mildly earthy floral hops on the finish from the Wakatu and Sorachi Ace hops.

Owl Day

Style: Pale Stout

Strength: 6.1% a.b.v.

Tasting Notes: A big beer with a even bigger difference between expectations and reality. Owl Day pours a bright amber colour, but the taste and aroma is all stout. It has delicious chocolate and coffee aromas and a rich and full body. Seeing isn’t believing after all…

Style: American Wheat Ale

Strength: 5.4% a.b.v.

Tasting Notes: Stakeout is a hazy amber coloured wheat ale with a smooth white head. Nice balance between hop bitterness and the fruity sweetness of the Citra and El Dorado hops used in both in the boil and for dry hopping. Taste and aroma both have hints of  grapefruit, pine and peach.

Last Crash

Style: Passionfruit Lager

Strength: 4.9% a.b.v.

Tasting Notes: A clean and refreshing lager beer infused with passion fruit. This beer has medium body from the lager malt but has a big juicy passion fruit flavour coming through, combined with a good dash of tropical fruitiness from the Citra and Simcoe hops.

Big Top

Style: Rye IPA

Strength: 6.3% a.b.v.

Tasting Notes: A big beer with a resinous and piney aroma from the Columbus, Chinook and Simcoe hops which are also used to dry-hop this Rye IPA, which also has a bitter and spicy flavour.

Evil Robot

Style: American Amber Ale

Strength: 5.0% a.b.v.

Tasting Notes: A continuously hopped amber ale brewed with cascade and generously dry-hopped with Citra and Cascade. This beer has a toasty biscuit flavour.

Milk Stout

Style: Milk Stout with Chocolate & Vanilla

Tasting Notes: Brewed with Cocoa and Vanilla this is a collaboration brew with Danish Craft Brewer Coisbo Beer. A rich and luxurious indulgence.

Wired IPA

Style: Oatmeal IPA

Strength: 5.9% a.b.v.

Tasting Notes: Wired is the little brother of our Hardwired Oatmeal IPA, it has a complex malt profile with a full body and smooth feel from the malted oats. The 4 varieties of hops, and particularly the massive dry-hopping impart a fruity and zesty flavour and the aromas of tropical fruit.

Blood Brother

Style: Black IPA

Strength: 4.6% a.b.v.

Tasting Notes: This blood orange session black IPA is brewed in collaboration with the Wicklow-based O Brother Brewing. It has a rich black colour, but the contrasting spicy bitterness of an IPA. It has the zest and fruit flavours from the dry-hopping with Citra and Galaxy, but these are added to by the infusion of blood orange at the conditioning stage.

Style: Amber Ale

Strength: 4.9% a.b.v.

Tasting Notes: This special one-off Amber Ale was brewed in collaboration with the Ladies Craft Beer Society. A complex grain bill gives smooth and clean caramel flavours. The Magnum bittering hops contribute a crisp hop bite and the late addition Galaxy hops, which are also used generously for the dry-hopping, give this beer a floral and citrus edge.

Black Flag

Style: Schwarzbier Style Dark Lager

Strength: 4.5% a.b.v.

Tasting Notes: Black Flag is a dark lager in the German Schwarzbier style. It has subtle aromas of coffee and chocolate and rich malty flavours yet is clean and refreshing due to the long lagering process.

Dead Ringer

Style: Session Black IPA

Strength: 4.3% a.b.v.

Tasting Notes: This Black IPA is single-hopped with Australian Galaxy hops. Mild malt sweetness and a subtle roasty character. Tropical hoppy aroma and finishes with a lingering bitterness.

Style: Oatmeal IPA

Strength: 7.4% a.b.v.

Tasting Notes: This Oatmeal IPA has an intensely rich malt profile with flavours of sweet caramel and dark fruits, with the hops imparting vibrant citrus zest and fresh tropical fruit aromas.

Fuzzy Logic Wheat Beer

Style: Wheat Beer

Strength: 4.7% a.b.v.

Tasting Notes: Brewed with equal parts wheat and barley malt, this traditional wheat beer is naturally cloudy with a hazy straw colour and a fluffy white head. Slightly sweet, with fruit flavours and a light hop bitterness from the Slovenian Bobek hops. Smooth and soft texture with hints of clove on the finish.

Ripcord Red Ale

Style: Hoppy Irish Red Ale

Hop Priority

Style: Triple IPA

Strength: 11.1% a.b.v.

Tasting Notes: Our strongest and hoppiest beer ever, brewed to celebrate our fifth birthday. Made with extra pale ale malt and cane sugar to produce a pale golden beer with a relatively dry body.

We use some of the world’s most highly acclaimed and sought-after hop varieties to give aromas of citrus and tropical fruits with a resinous, bitter finish.

Style: American Dark Ale

Tasting Notes: Brewed with pale ale malt and dehusked roast malt for a dark beer with a minimal malt profile. Hopped with Chinook, Citra and Vic Secret to provide a piney and citrussy hop flavour.

Wandering Star

Style: Blonde Ale

Strength: 5.3% a.b.v.

Tasting Notes: A light bodied beer with an English malt and yeast profile. Hopped with Australian Summer and German Huell Melon hops for a light fruity aroma.

Gate Crasher

Style: English-Style Bitter

Strength: 4.2% a.b.v.

Tasting Notes: Lots of complexity on the grain bill which gives a pleasing caramel sweetness from the three different crystal malts. This contrasts with the use of a single hop variety, in this case Chinook, to give the beer a clean, pine hop bitterness. Not quite the traditional English bitter, given the modern twist of the American hop and the Irish brewers.

Beoir #2

Style: Imperial Red Ale

Strength: 7.8% a.b.v.

Tasting Notes: This Imperial Red Ale brewed in collaboration with Beoir is a rich, full-bodied beer dominated by its distinctive hoppy aroma. A blend of New Zealand and American hops provide notes of summer and tropical fruits, which carry over into the flavour and are backed up by sweet caramel and toffee flavours and finishes with a pleasant warming sensation from the strong A.B.V.

Hidden Agenda

Style: Pale Ale

Strength: 4.5% a.b.v.

Tasting Notes: Brewed with the Australian hops Vic Secret and Summer in the boil, and dry-hopped with lots of Vic Secret post fermentation. This draft-only pale ale is unfiltered so it is delivered as fresh as a beer can be. The beer gives a big hop punch on the back of a crisp, complex malt profile.

Oh Yeah!

Style: American Black Ale

Strength: 5.8% a.b.v.

Tasting Notes: Black in colour but with the full hop flavour of an IPA. A big citrus bite that belies the dark colour of the beer.

Chasing The Dragon

Style: Double IPA

Strength: 8.0% a.b.v.

Tasting Notes: Brewed for the ICBCF, this beer is strong and hoppy, a big aroma of mangos, peach and apricot with a spicy tang. The warming alcohol gives way to an aggressive and dry finish.

Kill Lager

Style: Vienna-Style Lager

Strength: 4.9% a.b.v.

Tasting Notes: In celebration of 452 days since we brewed our first beer in Kill, we brewed this Vienna-style lager. This malty, amber coloured lager is conditioned for a full six weeks which results in a beer with a soft hop bite and a sweet finish.

Agent Provocateur

Style: Rye Red Ale

Strength: 6.2% a.b.v.

Tasting Notes: Hoppy red ale with a spicy malt profile from crystal rye malt. Single hopped, using Centennial hops gives this beer a resinous hop finish.

Lazy Sunday

Style: Belgian-style Saision

Strength: 6.1% a.b.v.

Tasting Notes: Brewed with barley, wheat and rye, fruity ester and Belgian yeast aromas with hints of pineapple from the US Stirling hops. Spicy and fruit flavour with a refreshing tart, dry finish.

Whistle Blower

Style: Strong IPA

Strength: 7.6% a.b.v.

Tasting Notes: Hoppy golden IPA brewed with Australian hops. Some residual malty sweetness balances the extreme bitterness and accentuates the tropical fruit flavours.

Big Bear

Style: Brown Ale

Strength: 6.0% a.b.v.

Tasting Notes: Roast coffee and chocolate flavours are prominent in this English-style Brown Ale, which also has hints of caramel and toffee sweetness. Phoenix hops help to enhance the chocolate aroma.
